Soak pitted dates in warm water for 5 minutes to soften.
Pulse the walnuts and coconut flakes in a food processor. Add the rest of the ingredients (besides chocolate chips and water) and process to fully mix into a dough.
Drizzle in water while it’s running to help it form a sticky dough. Add a little more if needed.
Roll into desired bites/balls and top with chocolate chips. You could also mix them right into the dough if you prefer.

Storage: Store in an airtight container in the fridge for 10 days or the freezer for even longer.
