Coconut Maple Granola

This simple granola beats store-bought every single time. Not to mention, it's totally customizable and full of nutrient-dense ingredients.

Ingredients

  • 1 cup cashews (unsalted)
  • 1 cup almonds (unsalted)
  • 1 cup rolled oats
  • 1 cup coconut flakes (unsweetened)
  • ½ cup pumpkin seeds (unsalted)
  • 2 tbsp flax seed (meal or whole)
  • 1 tbsp cinnamon
  • ½ tsp salt
  • ¼ cup maple syrup
  • 2 tbsp coconut oil (melted)
  • 2 tsp vanilla extract

Instructions

  • Heat oven to 350 degrees. Line a half baking sheet with parchment paper.
  • Mix all dry ingredients (nuts, coconut, flax, cinnamon, salt) into a large bowl. Mix all wet ingredients (maple syrup, melted coconut oil, vanilla) into another bowl.
  • Pour the wet over the dry ingredients and mix well until combined.
  • Pour mixture onto baking sheet with parchment paper. Spread out evenly. Bake for about 15 minutes. Toss the granola lightly and let bake for 5 more minutes. It should be golden and toasted (if not, go a few more minutes).
  • Let it sit for 15 minutes to cool down. It will also harden a bit during this time, which makes for the best bites! Enjoy right away or store in an air-tight jar for many weeks.
