Walnut Cookie Bites

These walnut cookie bites are just divine! They taste like straight up cookie dough, yet are jam-packed with loads of nutrients. I love keeping sweet treats like this around; they’re perfect when you’re running out the door, could easily be considered dessert, yet are healthy enough to have for breakfast. I’d say that’s a win/win/win.

I made them before going on a road trip last month and they barely made it through the car ride. My best advice? Double the recipe (or keep a lock on the container!).

Equipment

  • 1 food processor

Ingredients

  • cups small coconut flakes (unsweetened)
  • cups walnuts (unsalted)
  • 1 cup medjool dates (~8-9 large)

  • ½ tsp cinnamon
  • 1 tbsp ground flax meal (optional)
  • chocolate chips (optional)

  • Pulse the walnuts and coconut flakes in a food processor. Add the rest of the ingredients (besides chocolate chips and water) and process to fully mix into a dough.
  • Drizzle in water while it’s running to help it form a sticky dough. Add a little more if needed.
  • Roll into desired bites/balls and top with chocolate chips. You could also mix them right into the dough if you prefer.
