Walnut Cookie Bites
These walnut cookie bites are just divine! They taste like straight up cookie dough, yet are jam-packed with loads of nutrients. I love keeping sweet treats like this around; they’re perfect when you’re running out the door, could easily be considered dessert, yet are healthy enough to have for breakfast. I’d say that’s a win/win/win.
I made them before going on a road trip last month and they barely made it through the car ride. My best advice? Double the recipe (or keep a lock on the container!).
Equipment
- 1 food processor
Ingredients
- 1½ cups small coconut flakes (unsweetened)
- 1½ cups walnuts (unsalted)
- 1 cup medjool dates (~8-9 large)
- 2 tbsp melted coconut oil
- 1 tbsp water
- ½ tsp sea salt
- ½ tsp vanilla extract
- ½ tsp cinnamon
- 1 tbsp ground flax meal (optional)
- chocolate chips (optional)
Instructions
- Soak pitted dates in warm water for 5 minutes to soften.
- Pulse the walnuts and coconut flakes in a food processor. Add the rest of the ingredients (besides chocolate chips and water) and process to fully mix into a dough.
- Drizzle in water while it’s running to help it form a sticky dough. Add a little more if needed.
- Roll into desired bites/balls and top with chocolate chips. You could also mix them right into the dough if you prefer.
