No Bake Fudge Brownies

If I had to pick one classic dessert to eat for the rest of my life, it would be a brownie. So why not make it even easier by leaving the oven out of it completely? It’s an ideal situation if you ask me. These no bake fudge brownies remind me of those Little Debbie Cosmic Brownies that I so desperately wanted in my lunch box (thanks for nothing, Mom!).

They also taste just like brownie batter so you could, in fact, just eat them right out of the bowl. Either way- it’s a simple sweet snack that happens to be packed with nutrients. Win/win as usual!

No Bake Fudge Brownies

Equipment

  • 1 food processor

Ingredients

  • 1 cup pitted medjool dates (~ 8 or 9)
  • 1 cup almond flour
  • ½ cup cacao powder
  • 2 tbsp almond butter (unsalted)
  • 1 tbsp maple syrup
  • ¼ tsp vanilla
  • ¼ tsp salt
  • 1 tbsp water

Instructions

  • Soak pitted dates in warm water for 5 minutes to soften. Make sure they’re packed into the measurement cup. Drain.
  • Pulse dates in food processor for 30 seconds or so, to chop up (it will almost be a paste). Add the rest of ingredients in (besides water). Process to fully mix into a dough.
  • It will end up almost forming a dough “ball”, but I usually have to add a little water at the end to help it come together. Add the water 1 tsp at a time.
  • Press into a loaf pan (lined with parchment paper) and sprinkle with flaky sea salt on top. Stick in the freezer for 15 minutes.
  • Pull out of loaf pan, using the parchment paper, and slice into brownies. Store in an airtight container in the fridge!
