I wouldn’t say I’m a diehard salsa fan. I like it, of course, but it’s usually on our weekly grocery list more for Michael (post-work, pre- dinner snack ya know?). And if offered as a dip next to guac.. it’s always going to lose, in my mind.

It’s also one of those foods that tastes 100x better when fresh (and is SO simple to make), yet not often made at home.. or at least in our case! Flash to the other night after just getting home from a fun weekend trip watching my brother get married– you know, one of the nights where the fridge only contains the remnants of what you left behind– and tacos seemed like a way to pull all the random, about-to-go-bad items together.

Some of those items happened to be heirloom tomatoes from the prior week’s farmer’s market haul. Then I noticed a raw white onion, and things started to take shape. SALSA! I threw a bunch of roughly chopped things in the food processor and after a couple pulses, was blown away at the flavor of the result. Maybe it’s because it was fresh, maybe it was the local in-season tomatoes– most likely a combo of both– but dang, it’s easily the best salsa I’ve had in a very long time. Will we become the weekly homemade salsa kind of household? Jury’s still out, but I do know I’ll be whipping this up MUCH more often!

It’ll store for about 2 weeks in the fridge. Use on tacos, eggs, burritos, as a dip– you know, all the places salsa thrives. Feel free to add a jalapeño or other type of pepper if you like heat; this one is totally mild.

INGREDIENTS:

(makes about 16 oz)

3 large tomatoes, roughly chopped into large chunks (about 2 cups)
2 garlic cloves, peeled
white or yellow onion, roughly chopped (about 1/4 cup)
red onion, roughly chopped (about 1/4 cup)
1 lime, squeezed
1 tsp cumin
1/4 tsp salt

(optional additions: jalapeños, cilantro)

*In-season tomatoes are obviously ideal as the flavor will be top notch.

RECIPE:

Add roughly chopped onions + tomatoes to food processor. And when I say roughly chopped, you can literally just cut into large chunks. Include jalapeño or cilantro here as well, if using.

Add in the garlic, salt, lime juice + cumin. Pulse several times to combine, or until it gets to your desired consistency. Taste to adjust salt or lime if needed.
