Salted Chocolate Brownie Bites
Maybe it was because sugar is one of my favorite topics to chat about, but I had SO much fun. It was the first time I truly enjoyed giving a talk from start to finish, without any nerves. It definitely helped that the group was incredibly interactive, warm, and receptive. We obviously ended the with these salted chocolate bites of heaven. They only require a handful of ingredients, yet have such an amazing, deep chocolately flavor. But let’s be real, salt + chocolate is truly the best match in all the land (in my opinion).
INGREDIENTS:
1 cup dates, pitted
1/2 cup coconut flakes
1 cup almond meal
1/2 cup cacao powder
3 TBSP coconut oil, melted
1/2 TSP salt
1/2 TSP vanilla
1-2 TBSP water
Optional toppings: coconut oil + coconut flakes
TO MAKE:
Combine all ingredients (besides water) in a food processor, until fully mixed.
Add in water, 1 TBSP at a time. The amount you need may vary every time you make these so use your judgement. You want it to be a sticky dough-like consistency.
Throw into the freezer for 10-15 minutes. Roll bites into melted coconut oil and then immediately into coconut flakes.
Store in the fridge for up to 3 weeks or freezer for longer.
