When you live in a place like Upstate NY, it can feel almost impossible to get local, seasonal produce all year round. I loved having a CSA last summer/fall (shout out to Deep Root Farm) and the farmers market is truly one of my most favorite places to be, but when the freezing temps hit– the selection get real slim.

Enter: The Good Food Collective. Sourced from over 140 different farms, this share runs all year round and even has options for meats, cheeses, breads, coffee and more. I’m so excited to be partnering with them this winter to get creative in the kitchen on a weekly basis (follow along on IG for updates in real time!). I received my first share last week and immediately got in the kitchen to whip up this nutritious bowl.

Feel free to use any roasted or raw veggies, add meat, swap out the lentils for brown rice, quinoa or another grain. The recipe is loose and meant to help inspire your own creation– the options are really endless! BUT I will say that this tahini drizzle has now become a staple in my fridge. Also, if you’ve never had a watermelon radish- get on it. The color alone will brighten up even the most grey of days!

INGREDIENTS:

lentils (or any grain)
sweet potatoes
carrots
pea shoots (or use any green you like!)
watermelon radish

tahini dressing:
1 tbsp tahini
1/2 lemon, juiced
salt + pepper

RECIPE:

Cook the lentils. Drain and run cold water over them until they’re cooled off. This helps to prevent further cooking/becoming mushy. Toss with olive oil, salt, pepper, and za’atar (optional).

Cut sweet potatoes and carrots, drizzle with olive oil, salt/pepper, and garlic powder. Roast on 400 until caramelized, about 30 minutes or so. Tossing half way if you think of it.

Slice radishes. Grab pea shoots (or your favorite greens). Combine everything into a bowl.

For the dressing– whisk together ingredients until it’s nice and creamy. Splash a little water if you’d like it thinner.
