Beet and Orange Coconut Ginger Bites

If you know anything about me, I’m alwaysss trying to sneak in extra nutrition (I also like tricking people). Because if you can do so while still making something taste downright delicious, why not?! These bites are chewy, nutrient-dense, and not too sweet. The orange adds a brightness that’s a nice surprise (especially for a treat-type snack).

Beet powder is the secret ingredient here and I happen to love the brand Love Beets (they’re also local to Rochester!), but you can use any beet powder you’d like. Beets are insanely good for us– filled with vitamins, they help to detox the liver and cleanse the blood. These bites are a great way to sneak more in, especially if you don’t love the messy process of cooking with them!

Beet and Orange Coconut Ginger Bites

INGREDIENTS:

(makes about 12-14)

1 cup almond meal/flour
1 cup shredded coconut flakes, unsweetened
1 cup dates, pitted
2 TBSP melted coconut oil
2 TBSP fresh OJ
1 TBSP beet powder
1/2 TSP vanilla
1/4 tsp ground ginger
1/4 TSP salt

RECIPE:

Combine everything into a food processor until dough comes together.

Add 1-2 tsp of water toward the end to help it form a sticky dough.

Shape into little discs or balls. Freeze for 15 minutes.

Dip into chocolate glaze (if using). Store in the fridge for up to 3 weeks.

optional chocolate glaze:
1/4 cup cacao powder
2 tbsp melted coconut oil
splash vanilla
coarse sea salt to sprinkle on top
