Grilled Peach Salad With Balsamic Glaze
Nothing screams summer more than grilled peaches. There’s something about grilling fruit that feels so elevated, even though it’s just about the most simple thing you could do. The slight char and rustic look just about gets me every time. This grilled peach salad is one you’ll be making on repeat.
Last week, I came home from my weekly farmer’s market run with a bundle of peaches alongside my CSA from Deep Root Farm and couldn’t wait to get into the kitchen. My CSA was filled with beautiful greens, cucumbers, purple spring onions, and beets. It just felt like a match made it heaven!
There aren’t specific measurements to this grilled peach salad because you can use your eyes to make as much as you want or need. It’s the perfect summer dish that you can throw together quickly, but still impress your guests (or significant other! Here’s to hoping this last month of Upstate NY summer goes niceeee and slow.
Ingredients
- red leaf lettuce (or any light lettuce)
- beets
- peaches
- cucumbers
- scallions or red onion
- goat cheese
- basil
- sesame seeds
- balsamic glaze + olive oil
Instructions
- Peel the beets and cut into desired chunks. Roast or boil them until cooked (when you can stick a fork into them).
- Slice + grill the peaches (either on a grill pan or an actual grill). Make sure the pan or grill is oiled a bit at first, and let the peaches sit undisturbed until grill marks form. Set aside.
- Combine the lettuce, sliced cucumbers, scallions, beets, and peaches into a bowl with some olive oil + salt and pepper. Lightly toss.
- Add the goat cheese, basil, sesame seeds, and balsamic glaze on top.
