Grilled Peach Salad with Goat Cheese + Balsamic Glaze

grilled peach summer salad

Nothing screams summer more than grilled peaches. (Okay, maybe ice cream.. but still.) There’s something about grilling fruit that feels so elevated, even though it’s just about the most simple thing you could do. The slight char and rustic look just about gets me every time.

Last week, I came home from my weekly farmer’s market run with a bundle of peaches alongside my CSA from Deep Root Farm and couldn’t wait to get into the kitchen. My CSA was filled with beautiful greens, cucumbers, purple spring onions, and beets. It just felt like a match made it heaven!

There aren’t specific measurements to this salad because you can use your eyes to make as much as you want/need. It’s the perfect summer dish that you can throw together quickly, but still impress your guests (or significant other!). Here’s to hoping this last month of Upstate NY summer goes niceeee and slow.
