When it comes to salads, my greens of choice are usually kale or spinach. But there’s just something about a crisp, romaine salad in the summer that really hits the spot. I ordered a similar one at Wegman’s a few weeks ago and forgot how much I love these flavors together.. and topped with a creamy lime peanut dressing? Well that’s just heaven!
I didn’t really use measurements for the veggies as it’s more a personal preference. I like to chop/slice/cut a bunch of each ingredient and then it’s super easy to throw together all throughout the week. There’s nothing worse than being starving and looking at a bunch of whole veggies in the fridge that you don’t have the time/patience to cut up, ya know? So put in the couple of extra minutes and your future self will thank you!
You could also top it with seared chicken or salmon and the peanut dressing would be delicious in a stir fry, with spring rolls, or even as a dip for sliced veggies. Enjoy!
INGREDIENTS:
salad:
romaine lettuce
sweet peppers
cucumbers
shredded carrots
scallions
top with:
avocado
cashews
cilantro
sesame seeds
dressing:
(makes about 1 cup)
1/4 cup peanut butter
1.5 tbsp coconut aminos (or soy sauce)
1 tbsp fresh lime juice
2 tsp sesame oil
2 tsp apple cider vinegar
pinch of salt
up to 1/4 cup of water
RECIPE:
Chop or slice all ingredients into desired sizes. I like to mix things up with different shapes for texture, but do whatever is easiest for you.
Mix the romaine, carrots, cucumbers, sweet peppers and scallions into bowl(s).
Make the dressing by whisking all ingredients (besides water) together. Slowly add water in until desired consistency is reached. You can always keep adding even more if you want a thinner dressing! It will thicken a bit in the fridge.
Pour over the salad and mix together. Top with cashews, sesame seeds, avocado and cilantro.
Dressing will stay fresh in the fridge for a few weeks.
